Ultradition is the house signature in a bottle: a subtle, fine, and complex blend of all three Champagne varieties, designed to express both fruitness and delicacy across the full diversity of Laherte terroirs. The name says it all — this is Champagne distilled to its purest tradition, then pushed a little further.
About the Producer Laherte Frères has been farming in Chavot since 1889, and today the domaine is known for its ecological approach in the vineyard and its thoughtful, hands-on winemaking. Vines are grown with deep respect for nature, influenced by ecological methods, and the average vine age here is around 30 years.
Winemaking Grapes are hand-harvested at full ripeness and pressed traditionally. Fermentation takes place across a combination of vats, foudres, and barrels, with malolactic fermentation only partially completed to preserve freshness. The wine ages on fine lees, and 40% reserve wines from previous vintages, aged in barrel on lees, are blended in for depth and continuity. Disgorgement is done by hand, with a dosage of just 4.5 g/l.
